Coffee Roasting Process

What differentiates one coffee flavor from another is the roasting process. Roasting transforms the chemical and physical properties of coffee beans into coffee products. Roasting makes changes in the green coffee that makes it expand, change in color and develop a distinctive color, smell and density. Roasting should also be done as close as possible to where it will be consumed. Discriminating coffee drinkers will want to roast their own coffee at home.
Roasting goes through a transformation that creates changes in the color, bean size and surface texture. The color goes from green to yellow, light brown and then it begins to crack. This is the point that is called city roast. It is at this stage that a lot happens to the beans. Roasting is stopped at this point.
